A big welcome to all of our news families that are joining us from LEGO KidsFest!  It was great to meet so many of you and have so many new friends join the Macaroni Kid family!  It was a great event and sort of an unofficial kickoff to the Spring/Summer family event season.  There are so many great things happening around town and will continue through the Fall!

Mexican Enchilada Lasagna


Make this family friendly recipe on Cinco de Mayo or any night you are craving Mexican flavors! This was a big hit, loved by all at our house!

Ingredients:
1 pound lean ground beef
1 package low sodium taco seasoning
1 (8 ounce) jar red enchilada sauce
12 (6 inch) corn tortillas - we used La Tortilla Factory Hand Made Style Yellow Corn
1 can low sodium black beans
12-15 ounces frozen or canned corn
2 cup shredded Mexican cheese

Preheat oven to 400 degrees F

Saturday, May 5 - Home Depot Kids Workshop

The workshops teach children do-it-yourself skills and tool safety, while at the same time helping to instill a sense of accomplishment. In addition to the newly constructed project kit, each child receives a kid-sized orange apron, similar to The Home Depot associates' aprons, and an achievement pin.

Saturday, May 5 - Family Fun Night: Global Gardens

Explore Japanese, Native American and Mexican cultures through hands-on art projects and planting activities. Special guests Jeff and Paige will join us for an environmental kids concert. Family Fun Nights are a unique opportunity to explore nature at night in the Mordecai Children’s Garden. Each month brings a new theme with performers in Sagebrush Stage, activities in the garden, snacks and other fun night time activities. Families are encouraged to bring a picnic dinner to enjoy in the Children’s Garden. Access to Family Fun Night is through the Morrison Discovery Center at 11th Ave. and York St.

Sunday, May 6 - Opera & Art: Western Style

The DAM partners with Central City Opera to present a wild west-themed, interactive opera performance and an artmaking activity in our western collection. Visitors can act, sing, dance, and explore art with the opera and museum!

Sunday, May 6 - Baby Boogie

Let the Babies Boogie!
It is Sunday afternoon and the kids are restless. What do you do? We know a place, the perfect location, in Old Town Arvada on Grandview Avenue called the D Note. Every Sunday the kids, from 1 month to 12 years old, come and enjoy music, both by listening to it, playing it and dancing to it. Parents relax at their tables, watching the kids dance and play together - great entertainment in and of itself. The children make new friends and greet some old ones. Some even make this a weekly gathering spot.

Wednesday, May 9 - Stroller Strides South Denver Grand Opening

Stroller Strides South Denver is under new ownership and is having a Grand Opening! If you have been wondering what this is about now is your chance!

There will be goodies and refreshments, a raffle for great prizes, and a gift bag full of free stuff for the first 25 Mamas!
Where: This class will be held at DeKoevend Park in Centennial, registration begins at 9AM. 
 We will meet at the picnic benches under the overhang. (Park behind Goodson Rec Center)

Cost: This is a free class so come check it out.

Stroller Strides is a 60 minute workout program designed for both pregnant moms and those with young children. Classes are interval based, with cardio and toning exercises, and are appropriate for all fitness levels. Children are kept involved throughout the workout with songs and other fun activities.

Saturday, May 12 - Dinosaur Discovery Day

An open house will celebrate earth resources, earth history, and International Astronomy Day. At the visitor center geologists and paleontologists will present hands-on activities including fossil, mineral and rock ID, fossil sieving, fossil scribing, fossil digging, gold panning, metal detecting, map reading, and analyzing groundwater. More scientists will speak at the world-famous track site and bone site and at 10 other sites on the Dinosaur Ridge Trail. Astronomy activities will include solar observing, searching for iron meteorites, finding the north star in daytime, an interactive sundial, an enormous model solar system, and an introduction to the Milankovitch cycles.
