Macaroni Eats: Mango Cucumber Salad

When your Macaroni Munchkins ask for seconds (and thirds!), you know you've found a salad recipe that is a keeper! This Mango Cucumber Salad has lots of fresh flavor and is quick and easy to prepare - perfect for busy moms!
What you'll need:
  • 1 English Cucumber
  • 1 medium sized mango
  • 1/4 cup rice vinegar*
  • 2 tbsp sugar
  • Dash of cayenne pepper
What you'll do:
  1. Chop up the cucumber and mango into bite size pieces. With the cucumber i cut it up into 1/2 inch rounds and the cut them in half. Place in a medium sized bowl
  2. In a separate bowl, mix  the rice vinegar, dash of cayenne pepper and sugar. Stir until the sugar is dissolved.
  3. Pour dressing over the mango and cucumber and toss to evenly distributed.
It's best to put to put the dressing on just before serving. This salad can be served at room temp or cold.

* You may want to use a little less than 1/4 cup rice vinegar as the vinegar and sugar causes the cucumber and mango to "spring" water, creating more liquid in the bowl.
