A Note From Your Publisher: The One About the Daily Dinner Dilemma 📝

Hey Mac Families!

The Dinner Dilemma.

Everyone has it now and then. For me, it's usually in January. Okay, let's be real... it's all the time.

I met a longtime friend for lunch recently. We hadn't hung out in a few years, but she's the type of friend where time makes no difference, so we got right down to the nitty gritty in our conversation. Her current issue? Cooking. She actually QUIT DINNER about six months ago.

WE CAN DO THAT?????

Well, most of us can't. But her kids are both young adults and perfectly capable of making their own dinner. She decided that making dinner every night was making her really unhappy, and it had to go. So she quit it.

Maybe someday I'll get there, but for now, I deal with the nightly Dinner Dilemma. What's for dinner?

I am sick of the dinners that are currently in our rotation, but I can't think of any new dishes to substitute in. I have some pretty hard and fast requirements for the dinners that I make, so coming up with new options can be tricky:

  • It must be easy and quick to prepare. Longer cooking times are fine, but I have zero interest in being in the kitchen for more than 20-30 minutes.
  • It can't have wacky or super expensive ingredients that I have to search for in the store, only to use one tablespoon and never touch again.
  • It has to have either a gluten free version, or something similar that I can make for my daughter, who has Celiac Disease.
