Hey Mac Families,
Easter is approximately three weeks away.
Maybe it is the three straight weeks of Spring Break that I'm smack dab in the middle of, but Easter hopped in and snuck right up on me.
Yes, I know I have three weeks. But if April is anything for you like it for me, we are ramping up for the end of school year, 60 days of chaos. You KNOW that, unless I take care of the Easter prep now, I am going to be one of those sad sacks that is scrounging through the rogue jelly beans that have escaped their packaging on a shelf full of the bunny shaped Peeps and the rice krispie chocolate coins that no one likes on Easter Eve.
Thankfully, I'll be forced to get my eggs together early this year because my oldest will not be able to make it home to claim his goodies (he's working), so I will (hopefully) be ready (kinda) for the basket filling relatively soon. The brunch/lunch/dinner? Yeah, not so much. I just finished making a St. Patrick's Day meal, after all.
My dilemma? We don't really love ham and I don't really love cooking anymore. Anyone have an easy yet impressive meal that I can serve?
Soooo, if you haven't started preparing for Easter, consider this your heads up! And I'd say go soon, because when I was shopping today, the shelves were already a little picked over (like the lawn after the Easter egg hunt is over).
